Chef Matt Otter introduced hay scallops from Nantucket with fennel, apple, and hazelnut-parsnip purée. Another chef urged, “you need to try this,” spotlighting bold flavors “from the capital of Baja.” And the most talked-about twist? “a ceviche taco”—shrimp as the “tortilla,” finished with sea elements and fermented pepper.
