My culinary identity is Freedom.
Freedom from culinary trends, freedom to create a dish with whatever product I have at hand, whether I caught it fishing or hunted it myself. Evolution in the kitchen comes with time — with the awareness of taking only what is necessary from nature and wasting nothing.
My cuisine is rooted in memory, whether it’s the local flavors of Baja or the stories from family and travel. Over time, those memories have evolved into a personal but universal culinary language.
