Three days in the historic center — the Art District, a serious farm-to-table circuit, the estuary at dawn, and the Art Walk on a Thursday evening.
SJD is 10 minutes from the centro. Check into Casa Natalia or The Drift — both in the Art District, both walkable to everything. Walk Blvd. Mijares and the cobblestone streets around Plaza Mijares before the heat builds. Visit the Misión San José del Cabo, founded 1730 — the anchor of the historic center, still an active parish. If it's Thursday, the Art Walk begins at 5pm; galleries along Obregón, Morelos, and Calle Álvaro Obregón stay open until 9pm with wine and live music. Either way: dinner at Casa Don Rodrigo — the 1920 casona that was built by the town's first Mayor. The cheese tasting in the cellar (three artisanal cheeses paired with mezcal or Mexican wine) is the most distinctly San José experience in town. Cantina 29 on-site for cocktails after.

Morning at Los Tamarindos — 5 minutes from the centro down a dirt road into Ánimas Bajas, where a 19th-century sugarcane plantation has been running as an organic farm and restaurant since 2003 under Chef-owner Enrique Silva. Walk the 14-hectare farm before lunch: chickens, quail, herb gardens, mango trees, seasonal vegetables. The suckling pig roasted over wood fire is the signature; the chocolate clam ceviche is the order you didn't know you needed. Cooking classes available if you book ahead. Afternoon: the Estero San José — a 150-hectare freshwater-saltwater estuary between the hotel zone and the sea, boardwalk entry free, over 350 documented bird species. Arrive around 5pm when the herons and egrets come in low. Dinner at Lumbre in the centro — Chef César Pita's live-fire kitchen on cobblestone. The zarandeado-style fish. The crispy octopus tacos. Saturday morning: the Organic Market — running since 2002, local farmers, artisans, honey, music. A 20-minute immersion in how the valley feeds itself. Then Acre — 60+ crops on a palm-canopy property just outside town, where Chef David Fajardo's kitchen earns a Michelin Green Star for sourcing from the surrounding land. Kampachi with pesto from the garden. Craft cocktails with fig leaf and guava from the farm. Midday: a final walk through the Art District galleries or a last coffee at The Drift before SJD — 10 minutes. If you haven't eaten at Límo Heritage Kitchen yet: Michelin-recognized 2025, Chef Guillermo J. Gómez, open-fire cooking rooted in Mexican vaquero and Argentine gaucho tradition. It is the most talked-about new kitchen in San José and the reservation most likely to require planning.

Early departure — 1.5 hours north on Highway 1, the last 9km on dirt road that requires a high-clearance vehicle. Cabo Pulmo National Marine Park is the only living coral reef in the Sea of Cortez, recovered from near-collapse through two decades of strict conservation. The underwater biomass is extraordinary — schools of tuna, bull sharks at the cleaning stations, sea turtles, eagle rays, hundreds of fish species. Book a snorkel or dive tour with a licensed local operator before you arrive: Cabo Pulmo EcoAdventures, Cabo Pulmo Adventures, or Dive Cabo Pulmo are the three most consistently rated. Tours run ~$80 USD, 2–3 hours, 3–4 reef stops. Reserve the park permit in advance through your operator. Back by 5pm. The Estero San José is best at 7am — arrive before the heat and before the boardwalk fills. The 150-hectare wetland, where the Río San José meets the Sea of Cortez, hosts great blue herons, snowy egrets, ospreys, brown pelicans, and dozens of migratory species November through April. Free entry, 45-minute walk, entirely removed from the resort strip. Morning coffee at one of the centro cafés, then the full gallery circuit at leisure — Art District galleries open mid-morning.
