There are few chefs as synonymous with the good life as Nobu Matsuhisa. The man known for perfecting miso black cod is more than a household name in modern Japanese cuisine—he’s a master of high-end hospitality, too, thanks to his Nobu Hotels, which he launched with partner Robert De Niro in 2013. The power duo has been expanding across the world, Nobu Hotels has arrived in another popular beach destination. For its debut in Latin America, the chain has chosen Cabo San Lucas, México.

Please tell us why you chose to open a hotel in Cabo San Lucas?

Los Cabos is México’s second largest touristic city and one of its most beautiful cities. They have gorgeous sunsets, ocean views and nightlife. It is the perfect place for a Nobu Hotel and restaurant.

What is the inspiration behind the décor of the NOBU hotel?

The Hotel blends contemporary Japanese minimalism with locally sourced natural, Mexican materials and finishes.


I love the warmth of the people and the unique flavors and spices of the food. Garlic, onions, cilantro, and chilies. These are all ingredients used in Mexican food as well as in my style of cooking.

Favorite Sushi?

I don’t have a favorite. I love all sushi.


I don’t have any one thing, but I always have a bowl of Inaniwa ramen after traveling. It helps with my jet lag.

Nobu!

Favorite City in the world?

I don’t have a favorite city. I travel 10 months out of the year. I have a home in Hakonae and I like spending time there when ever I am in Japan.

I am very flexible, I like to stretch a lot

Being at home relaxing, not answering any phone calls or seeing anyone but my wife.

I love to take a relaxing hot bath before bed.

Favorite City in the world?

Even though I lived in Peru for some time, I never had the chance to see Machu Pichu, until last year. I took my wife, daughters, grand daughters and a few close friends. It was an amazing experience and I felt very fortunate that I could share it with the people I love.

Meeting the Dalai Lama
