Interview Series Chef Extraordinaire - Miguel Angel Guerrero
Chef Miguel Ángel Guerrero is widely recognized as the creator and leading voice of BajaMed cuisine, a culinary movement that helped position Baja California on the global gastronomic map. For more than two decades, his philosophy has been shaped by the landscapes and traditions of the peninsula — the Pacific Ocean, the desert, the vineyards, and the culture of hunting, fishing, and gathering ingredients directly from nature. Blending Mexican roots with Mediterranean and Asian influences, Miguel Angel developed a cuisine that is instinctive, sustainable, and deeply connected to place. Through his restaurants and pioneering vision, he has become one of the most influential chefs in contemporary Mexican gastronomy while remaining deeply loyal to Baja California’s identity.

Your cuisine feels deeply personal. If you had to distill your culinary identity into one essential idea, what would it be—and how has it evolved over time?

My cuisine is defined as Freedom.
Freedom from culinary trends, freedom to create a dish with whatever product I have at hand, whether I caught it fishing or hunted it myself.
Evolution in the kitchen comes with time — with the awareness of taking only what is necessary from nature and wasting nothing.

Baja California offers a striking sense of place. How do you translate the landscape—sea, desert, and vineyard—into a coherent culinary language?

They translate into inspiration. I have known it since childhood, thanks to my father and uncles, who taught me how to hunt, fish, and dive.
A Baja sunset inspires you to create. That is why I began cooking, and now, as an adult, I continue doing so with a good glass of wine.

Every great chef develops an almost obsessive relationship with certain ingredients. Which ones define your kitchen, and why are they indispensable?

Gathering ingredients through hunting, fishing, and diving becomes obsessive because of their unmatched freshness and flavor. Accompanied by a great extra virgin olive oil, shallots, and Maldon salt, among other ingredients, they are essential in my kitchen and part of my identity.

I find this balance through experience.
I spent more years cooking instinctively, shaped by my travels throughout Baja.
I am a lawyer by profession, though I never practiced — it was a family expectation I fulfilled.
My second degree is as a Professional Chef, and that brought me the balance that allowed me to understand what I had been doing intuitively all along. It is also the profession that fulfills me in every sense. We are celebrating 25 years of BajaMed Cuisine, the name I gave to my style of cooking as a tribute to Baja California.

I elevate my menu by relying on the finest products from the region. Baja California has it all: poultry, meats, seafood, fish, and outstanding producers of fruits, vegetables, cheeses, and more. We are an incredibly blessed region.

From your perspective, how is Valle de Guadalupe positioned today within the international food and wine landscape?

Valle de Guadalupe is a global reference point for gastronomy and wine. We offer something for everyone — couples, families, groups of friends — along with an extensive variety of wines, some of which are now Internationally recognized favorites.

For me, Luxury dining is defined by the company. A great conversation shared over dinner and wine, with discreet service and a welcoming atmosphere.

Sustainability is often discussed, but rarely understood in depth. What meaningful practices—often unseen by the guest—truly shape your approach?

I have understood sustainability since childhood; every good fisherman and hunter practices it naturally. Everything has its cycle, including what we grow in our own garden.
Sustainability is not about denying a product — it is about offering products that are sustainable and in season.

Which global influences have shaped your vision, and how do you reinterpret them while preserving a strong sense of place?

A sense of belonging comes from where you are born, from your influences and family heritage. BajaMed cuisine carries Mexican, Mediterranean, and Asian influences.
My family heritage includes three Spanish grandparents and one Irish grandparent. One grandfather was a shepherd, one grandmother was both a teacher and a chef, and another had deep knowledge of Andalusian cuisine.

Beyond trends, what kind of legacy do you hope to build—and how do you envision the future of Baja’s cuisine on the global stage?

I hope future generations respect the environment we live in and appreciate it as it is, without trying to alter it. If they do, it will continue to offer them endless opportunities, and that is how a lasting legacy will be built.
I hope BajaMed continues to grow and never reaches “the top,” because once something reaches the top, it begins to decline. We must keep building.
